Ingredients 
 

For St. Patrick's Day Mint Brownies

For Green Peppermint Frosting

  • ½ cup unsalted butter
  • 2 ½ cups confectioners' sugar
  • 1 tsp peppermint extract
  • 2 tbsp whipping cream
  • 3-4 drops green food coloring

For Chocolate Layer

  • 8 oz chopped dark chocolate
  • 2 tbsp vegetable oil

Instructions 

For Peppermint Frosting

  • In the bowl of a stand mixer, use whisk attachment on high speed to beat butter with confectioners’ sugar, peppermint extract, whipping cream and a few drops of green food colouring for a full 5 minutes until very fluffy. Spread over cooled brownies. Use the bottom of an oiled loaf pan to smooth it out (optional). Freeze until firm.

For Chocolate Layer

    For St. Patrick's Day Brownies

    • Microwave chocolate with oil on medium power for 2 minutes, stirring occasionally, or until nearly melted with a few lumps remaining. Stir to finish melting. While chocolate is still runny, pour it over the cold peppermint layer, tilting the pan to spread it evenly (this makes a smoother finish than spreading with a knife).

    Notes

    You can trade the chocolate bars for chocolate chips if you like. 8 oz chocolate by weight is about 1 1/3 cups of chocolate chips.
