Marinate the Chicken
- Cut the chicken thighs into 1-inch bite-size pieces for even cooking. I like to use scissors, like the image below.
- In a large bowl, combine garlic, melted butter, olive oil, Parmesan, parsley (if using), Italian seasoning, smoked paprika, salt, and pepper.
- Add the chicken and toss until fully coated.
- Cover and let stand at room temperature for 30 minutes to let the flavors soak in.

Thread the Skewers
- If using wooden skewers, soak them in water for 20–30 minutes to prevent burning.
- Thread the marinated chicken pieces onto skewers, leaving a little space between pieces for even cooking.
* Note: If you are cooking your chicken straight from the fridge, you’ll need to add up to 5 minutes to the cooking times.

Choose Your Cooking Method
Grill Instructions:
- Preheat grill to medium-high heat (400–425°F) and oil the grates.
- Place skewers directly on the grill. Cook for 10–12 minutes, turning every 2–3 minutes, until charred and cooked through (165°F internal temp).
Oven Instructions:
- Preheat oven to 425°F and line a baking sheet with parchment or lightly grease it.
- Place skewers on the sheet and bake for 20–25 minutes, flipping halfway, until golden and cooked through.
Air Fryer Instructions:
- Preheat air fryer to 375°F.
- Arrange skewers in the basket in a single layer. Air fry for 12–15 minutes, flipping halfway, until golden and cooked to 165°F.
