Cut chicken thighs into 1-inch pieces. In a large bowl, mix olive oil, melted butter, garlic, Parmesan, parsley, Italian seasoning, smoked paprika, salt, and pepper. Add chicken and toss well to coat. Cover and marinate at room temperature for 30 minutes (or in the fridge for up to 2 days - see note*).
Thread chicken onto skewers.
Oven Baking Method:
Preheat oven to 425°F. Line a baking sheet with parchment or lightly grease.
Arrange on baking sheet and bake for 15-18 minutes, flipping halfway through, until browned and cooked to 165°F internal temp. Let rest a few minutes.
Air Fryer Method:
Preheat air fryer to 375°F. Air fry for 10-12 minutes, flipping halfway, until golden and cooked through (165°F). Let rest before serving.
Grill Method:
Preheat grill to medium-high (400–425°F) and oil the grates. Grill for 8-10 minutes, turning every 2–3 minutes, until nicely charred and cooked through (165°F). Rest a few minutes before serving.
Notes
*Cooking Time: If you are cooking your chicken straight from the fridge, you'll need to add up to 5 minutes to the cooking times.Flavor: Parmesan creates a savory crust as it cooks and adds rich umami flavor. Leave it out if you'd like a more mediterranean flavor profile, to serve with hummus and tzatziki sauce.
