This Cracker Bark is a SUPER-simple nostalgic recipe my grandmother used to make and it’s got this sweet-and-salty thing going on that everyone is obsessed with.

With a crisp, salted-toffee-like base and a layer of chocolate that snaps when you bite in, I guarantee you won’t stop at one.

It lasts up to 2 weeks at room temperature in an airtight container, or up to 3 months when frozen, making it perfect to prep ahead for holiday gifting (and it holds its quality well).

(This is kind of a simpler, quicker version of my fav toffee cookie bark recipe, with similar flavors!)

Here’s What You Need

This recipe keeps it simple with ingredients you might already have on hand.

Saltine cracker toffee ingredients.

Saltine Cracker Toffee Ingredients

  • Saltine Crackers: The base layer for that classic crunch. The salty edge balances the sweetness.

One sleeve of saltine crackers is generally about 4 oz or roughly 40 crackers. This is enough to cover a standard 10×15-inch baking sheet in a single layer.
  • Butter: Adds richness and helps the sugar form a caramel layer over the crackers.
  • Brown Sugar: Creates that toffee flavor and texture when combined with butter. The molasses in brown sugar gives depth.
  • Chocolate Chips: A smooth, melty top layer. Choose milk chocolate for extra sweetness or dark for a bit more bite.
  • Optional Toppings: Chopped nuts, sea salt, or sprinkles can add texture, flavor, and a little extra visual appeal.

Variations and Substitutions

Here are a few ways to tweak the recipe to suit your tastes or pantry:

  • Gluten-Free Crackers: Swap in gluten-free crackers to make this a gluten-free treat.
  • Vegan: Use a plant-based butter and chocolate if you’re making a dairy-free or vegan version.
  • Chocolate: I love to splurge on good chocolate for this, since it’s so simple and the chocolate is the star. Chopped swiss chocolate bars take it to the next level.
  • Add Nuts: Chopped toasted pecans or almonds add a nice crunch and a bit of flavor contrast.

Grab These Tools

To make this recipe smoothly, have these tools ready:

  • Baking Sheet: A standard 10×15-inch baking sheet works well for even spreading and baking.
  • Microwave-Safe Bowl: If toasting nuts in the microwave, you’ll need a bowl that’s microwave-safe.
  • Saucepan: Essential for melting butter and sugar into that toffee goodness.
  • Silicone Spatula: Great for spreading the toffee mixture and melted chocolate evenly.

How to Make Saltine Cracker Toffee: An Easy Guide

This recipe is straightforward and only needs a few steps to turn basic ingredients into an addictive treat. Here’s how to make it:

Prepare Your Baking Sheet

Start by lining a 10×15-inch baking sheet with foil, then spray it lightly with cooking spray to prevent sticking. Arrange the saltine crackers in a single layer, covering the entire surface.

Make the Toffee Mixture

In a saucepan over medium heat, combine the butter and brown sugar. Stir constantly until the mixture begins to bubble, then let it cook undisturbed for about 2-3 minutes until it thickens slightly. Remove from heat as soon as it’s ready.

Pour and Bake

Pour the hot toffee mixture over the saltine crackers. Use a spatula to spread it evenly over all the crackers. Bake in a 350°F oven for 5 minutes. The toffee should be bubbly and evenly caramelized.

Add the Chocolate

Remove the baking sheet from the oven and immediately sprinkle chocolate chips over the hot toffee. Let them sit for about a minute to melt, then use a spatula to spread the chocolate evenly over the toffee layer.

Top and Cool

If desired, add chopped nuts, a sprinkle of sea salt, or festive sprinkles while the chocolate is still soft. Allow the toffee to cool completely on the baking sheet, then break it into pieces once set.

5 Common Mistakes When Making Saltine Cracker Toffee

Here are the most frequent mix-ups to avoid when making Saltine Cracker Toffee:

  1. Not Fully Dissolving the Sugar: If the sugar isn’t fully dissolved before boiling, the toffee can turn out grainy. Stir the butter and sugar mixture until smooth, then stop stirring as soon as it starts to bubble.
  2. Stirring While It’s Bubbling: Once the mixture begins to bubble, avoid stirring. Stirring while it cooks can cause sugar crystals to form, resulting in a gritty texture. Let it cook undisturbed.
  3. Skipping the Liner on the Baking Sheet: Without foil or parchment, the toffee mixture can stick to the pan, making cleanup difficult. Line the baking sheet with foil and give it a quick spray to prevent sticking.
  4. Overcooking the Toffee: Leaving the toffee in the oven for too long can make it overly hard or burnt. Bake it just until the toffee bubbles evenly—about 5 minutes—then remove it promptly.
  5. Not Letting the Chocolate Fully Melt: If you try spreading the chocolate before it has softened, it won’t go on smoothly. Let the chocolate chips sit on the hot toffee for about a minute before spreading, so they melt evenly.

Saltine Cracker Toffee Make Ahead and Storage

Saltine Cracker Toffee is easy to make ahead and stores well for later enjoyment. Here’s how to store it best:

  • Store at Room Temperature: Keep toffee in an airtight container at room temperature for up to 2 weeks.

Saltine Cracker Toffee Recipe

This Saltine Cracker Toffee is a quick and delicious treat with a perfect balance of salty and sweet flavors. With a buttery toffee layer, melted chocolate, and a crisp saltine base, it's easy to make and great for gifting.
Prep Time: 5 minutes
Cook Time: 10 minutes
Servings: 12

Ingredients

  • 40 saltine crackers
  • 1 cup unsalted butter
  • 1 cup packed brown sugar
  • 1 ½ cups chocolate chips milk or dark, your choice
  • ½ cup chopped nuts sea salt, or sprinkles (optional)

Instructions

  • Preheat the oven to 350°F. Line a 10×15-inch baking sheet with foil and spray lightly with cooking spray. Arrange the saltine crackers in a single layer to cover the entire pan.
  • In a saucepan over medium heat, melt the butter and stir in the brown sugar. Continue stirring until the mixture begins to bubble, then let it cook undisturbed for about 2-3 minutes until it thickens slightly.
  • Pour the hot toffee mixture over the saltine crackers, using a spatula to spread it evenly. Bake in the preheated oven for 5 minutes, until the toffee is bubbly and evenly caramelized.
  • Remove the baking sheet from the oven and sprinkle chocolate chips over the hot toffee. Let them sit for a minute to melt, then use a spatula to spread the chocolate evenly.
  • Add chopped nuts, a sprinkle of sea salt, or sprinkles, if desired. Allow the toffee to cool completely in the pan, then break it into pieces once fully set.

Notes

  • The toffee is ready to take out of the oven when the entire surface is bubbling evenly, with no dry or unmelted spots. This usually happens around the 5-minute mark.
As soon as you see consistent bubbling across the pan, take it out!
  • For a gluten-free version, substitute with gluten-free crackers.
  • To avoid grainy toffee, stir the butter and sugar until fully dissolved, and stop stirring once it bubbles.
  • Use milk or dark chocolate chips based on your preference. Dark chocolate gives a less sweet balance.
  • Store toffee in an airtight container at room temperature for up to one week, refrigerate for up to two weeks, or freeze for up to three months.
  • Let frozen toffee sit at room temperature for a few minutes before serving to allow it to regain its crunch.
