Here’s my step-by-step guide to the perfect air fryer chicken from frozen:

Make the rub for the chicken 

Combine paprika, garlic powder, salt, black pepper, cayenne pepper, and brown sugar in a bowl. Mix in olive oil in to form a seasoning blend and paste.

Coat the frozen chicken breasts with the paste. Try to cover them as evenly as possible.

Cook the chicken

Preheat the air fryer to 350°F. 

Place the seasoned chicken breasts in the air fryer basket in a single layer. Make sure they have space between them and are not touching.

Cook for 25-35 minutes, depending on the thickness of the chicken breasts. Halfway through the cooking time, flip the chicken breasts to ensure even cooking.

        Thawed boneless skinless chicken breasts usually take 10 to 12 minutes at 400°F in an air fryer, flipping once. Check for 165°F in the thickest part since size can vary a lot.

    I used boneless and skinless chicken breasts. The taste was delicious (loved the touch of cayenne) and the meat was quite moist. I used honey instead of brown sugar, which resulted in my ONLY issue…the honey hardened as soon as I tried to spread it on the frozen chicken! I may cook the unseasoned chicken for 5 – 10 minutes next time and then apply the rub to a warmer surface. Made it very easy to meal prep for my next couple of meals. Delicious when chopped and mixed cold with a cold quinoa salad (I keep it simple with cukes and peppers) OR equally delicious when served warm with whatever you like!

    Hi I was just wondering when is the best time to take the temperature of the chicken when it’s in the air fryer it has already reached 165 now when I take it out to rest the temperature rises above 165 so should I be taking it out before it reaches 165 in the air fryer let it rest and then it will reach 165 I have found that if I cook it to 165 the chicken normally comes out dry and kind of stringy and the temperature goes over 165 I think I could really use your help please

      Hi Brock, from a food safety perspective I feel obligated to share the USDA official recommendations but you’re absolutely right that with carry-over cooking, it’s safe to pull it out a little before the suggested safe doneness. Larger cuts of meat rise more in temperature than chicken breasts. I wouldn’t pull them out before 160ºF in the thickest part, but some chefs suggest 155ºF and tenting with foil to maintain temperature during resting.
