You know that test they do on people to tell if they have dementia? They ask questions like, what month is it? And what year?  Well, it doesn’t bode well for my future old-lady self that I could easily fail that as a perfectly (fine, reasonably) sound-minded 31-year old.

I’m gonna say welcome, September! But my brain is legit still in June.

If there’s anything that can soften the blow of August coming to an end, it’s a friend with a backyard apple tree bringing you a giant bag of her harvest (thanks, Jenny!).

Vancouver has let us know this week (with heavy clouds and rain) that fall is definitely happening, so I’m embracing it with a bottomless teapot, wool socks and this cinnamon-scented, apple-laden cake.

I piled all the apples on top and dotted them with butter and brown sugar. They soften into a sticky, caramelized apple pie-like topping, sinking into the tender batter as it rises.  And isn’t it pretty?  #septemberwin

Also, I have to admit that I was wrong about something.  Instagram stories. They appeared in my life at a moment when I was feeling a bit of social media burnout, and I was crotchety. Super crotchety.  I’m sorry about that.

But since then, they’ve completely wiggled their way into my heart. I love seeing glimpses into the lives of people I’ve followed for years, I’m OBSESSED with the behind-the-scenes photoshoot vids, and I love seeing where people live and what my internet friends see in their backyards and everyday adventures.  It makes me feel like I know people better.

Apple Pie Cake

The best apple cake – a fluffy, tender cinnamon spiced cake base topped with lots of juicy, brown-sugared apples. It’s like an apple pie and a cake had a delicious, delicious baby.
Prep Time: 15 minutes
Cook Time: 50 minutes
Total Time: 1 hour 5 minutes
Servings: 9

Ingredients  

  • ½ cup butter softened
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 1 egg room temperature
  • 1 tsp pure vanilla extract
  • 9 oz/2 cups all purpose flour
  • 1 tsp baking soda
  • 1 tbsp cinnamon
  • ½ tsp ground ginger
  • ¼ tsp ground nutmeg
  • ½ tsp kosher salt
  • 1 cup buttermilk
  • 3 medium apples peeled, cored, and thinly sliced

Toppings

  • 3 tbsp butter softened
  • â…“ cup brown sugar
  • ½ tsp cinnamon
  • pinch of salt

Instructions 

  • Preheat oven to 350ºF. Line an 8×8″ square baking pan with parchment paper, or grease well with butter and dust with flour.
  • Combine butter and sugars in bowl of standing mixer and beat until fluffy and pale, about 2 minutes, scraping down sides occasionally.  Beat in egg and vanilla.
  • In a separate bowl, whisk together flour, baking soda and spices.  With mixer speed on low, gradually incorporate about 1/3 of the flour mixture, followed by 1/2 of the buttermilk. Repeat, ending with final third of flour.
  • Spread batter evenly into prepared pan, then cover the surface with apple slices.  In a small bowl, combine  topping ingredients with a spoon, then use your fingers to pinch off small pieces to drop on top of the apples. Bake for about 50 minutes, or until top is caramelized and centre feels slightly springy when gently pressed.
