Rainbow Crostini

A healthy, light appetizer with all the crunchy veggies and beautiful colours of the farmer's market. A simple formula is all you need to freestyle the recipe.

  • 1 baguette sliced into rounds
  • Avocado, cream cheese, ricotta, or mascarpone
  • assorted veggies sliced, shredded, and/or shaved with a mandoline
  • capers, pickled vegetables, or a squeeze of lemon
  • flaky salt


  • Spread the avocado or cheese on the baguette slices, then top with remaining toppings and a good sprinkling of salt.
