The classic Cuban highball: fresh mint and lime muddled with sugar, white rum and club soda over ice. Cool, fizzy and endlessly refreshing — batch it for a crowd.
Muddle the mint leaves and lime with the sugar in the bottom of a glass until the sugar is fairly dissolved. Stir in the rum. Fill the glass with ice cubes and top with club soda. Toss in a few raspberries, if desired. Cheers!
Notes
Muddle gently: Press the mint just enough to release its oils; over-muddling makes it bitter.Dissolve the sugar: Muddle with the lime and sugar until mostly dissolved for even sweetness.Batch it: These are approximate amounts for one serving — multiply for a pitcher.Adjust to taste: Tweak the rum and sugar to your preferred strength and sweetness.
