Curried Cauliflower and Quinoa Soup

Ingredients

  • cup olive oil
  • 1 large onion finely chopped
  • 2 tsp kosher salt divided use
  • 1 tbsp fresh ginger
  • 1 tbsp curry powder
  • ¼ tsp cayenne
  • 1 ½ litres/quarts chicken or vegetable broth
  • 2 medium carrots peeled and chopped
  • 1 large cauliflower chopped into large florets
  • 1 cup quinoa
  • 2 tbsp butter

Instructions

  • Heat the olive oil in a dutch oven over medium-high heat.
  • Cook the onion with 1 tsp of the salt until soft.
  • Add the ginger and curry powder and cook a minute more before pouring in the broth.
  • Add the carrots, cauliflower, quinoa and remaining 1 tsp of salt.
  • Cover, bring to a boil, then reduce heat and simmer for 20-30 minutes, until cauliflower is soft and quinoa is cooked through.
  • Stir in butter. Taste soup and add more salt as needed until the soup tastes vibrant and savoury.
