- ¼ cup mayonnaise
- ¼ cup full-fat Greek yogurt
- 2 tsp lemon zest
- 5 tsp lemon juice
- ¼ tsp kosher salt
- 1 tbsp olive oil
- To make ahead, store in sealed jar in the refrigerator for up to 5 days.
OPTIONAL: stir in 1 tbsp minced fresh herbs (parsley, dill or chives), 1/2 tsp freshly ground black pepper, up to 1 tsp smoked paprika, or a squirt of sriracha. You could even make a sweet yogurt dressing for fruit salad by adding 1-2 tsp of honey or sugar.
2 tsp lemon zest is what you'll get from one average lemon.
Use fresh lemon juice for this for tastiest results. Your lemon will likely give you more juice than you need for this recipe. Freeze it or use it somewhere else, don't add extra to the sauce or it will upset the balance of flavors.
