This month’s giveaway is one I’m really excited about – it’s a Breville Fast Slow Pro multi-cooker that let’s you pressure cook, slow cook, steam, sauté, sear, reduce and keep warm all in the same (dishwasher-safe!) bowl. Get ready for fall-off-the-bone braises and lightening-fast legumes. It’s amazing.
In Indian households, the pressure cooker is used constantly. Like, several times a day. Long ago, my mother-in-law taught me how she uses it for her daily lentils and chickpea, mutton or chicken curries but she’ll bust it out even for just cooking a few chunks of vegetables. She bought me my first one in India, and I use it all the time for cooking things like squash and sweet potatoes down to soups in minutes.
Although by no means dainty, this appliance has earned a permanent place on my counter because I’m just using it that much. The first time was to pressure cook chickpeas (in 20 minutes). When I opened the lid, I wondered if something had gone wrong, because they were all beautifully intact (not my experience with my stove-top pressure cooker or just boiling them). I gingerly bit into one, expecting it to be rock-hard, but it was perfectly tender. I was sold. It gets an almost-daily workout now that I’m making fresh baby food several times a week; I just throw a bunch of stuff in (last time was chicken thighs, sweet potatoes, a small piece of onion for flavour, and chicken broth) and choose a pressure cook setting, then either fork-mash or use my immersion blender. Clean-up is painless, and it is virtually silent in comparison to the screaming stove-top pressure cooker that makes my dog quake in fear.
If you’ve ever been hesitant about pressure cooking, because of out-dated safety concerns or just general intimidation, this is the machine for you. It is pre-programmed with the time, pressure and temperature that different foods need with 11 different pressure cook settings to eliminate the guesswork. The LCD screen tells you when the cooker is pressurizing, cooking or releasing steam, and it has a 3-way safety system with safety locking lid, automatic hands-free steam release, safety valve. This baby is easy and secure.
In the slow cook settings, you can select ‘HI’ or ‘LO’ from 2 to 12 hours (and also keep warm). I love that you can sear foods first and then reduce the sauce afterwards without dirtying another pan. This takes slow cooker from being more of a convenience appliance to being an amazing-food appliance. (Although the convenience of having a hot meal ready at the end of the day and not having to be home in the afternoon is still a powerful selling point!)
Bottom line is I love this machine and I’m excited to share one with you!
