Welcome to Foodess

Hi there! I’m Jennifer Pallian (but you can call me Jenn), the voice behind Foodess.

I’ve got a food science background, 15 years in a test kitchen and 3 kids to feed.

I share cozy, makeable recipes and simple food science tips to make everyday cooking faster, easier and tastier.

Foodess began way back in 2009.

After earning my bachelor of science in Food, Nutrition and Health and qualifications as Registered Dietitian, I realized my true passion was not just the science of food, but using it to make foolproof recipes that make it easier to eat deliciously well. 

I started my career in a test kitchen for a flour company, where I honed my recipe development skills and did a deep dive into professional baking (psst. you really must try my no-fail flaky pie crust recipe!).

Now, I work full time in food writing, recipe testing and content creating. 

In addition to creating all of the content here, I’m also a seasoned food writer for various magazines and publications. You may have seen me in Better Homes and GardensMen’s Health, Jamie OliverCBSFOX News, and Food Network.

Over at Chatelaine Magazine (Canada’s largest women’s brand), I contribute regular recipes and cooking school features as resident food scientist and test kitchen team member.

On Foodess, you’ll find obsessively-well-tested recipes (like the Fluffy Vanilla Cupcake recipe and Easy Frosting recipe I spent my adult life perfecting as well as step-by-step guides and hacks (like How to Make a Poached Egg in the Microwave).

My goal is to give you makeable, cozy recipes and simple tips rooted in food science to make everyday cooking faster, easier, tastier, more successful and totally stress free.

I live in Vancouver with my Indian husband Adarsh, who’s the official taste tester for all our Indian recipes. He gives me the final sign-off on publishing dishes like the Butter Naan I spent 19 years testing, our authentic Chai Tea recipe or the fan-favourite Butter Chicken.

We have three little boys, Theo, Everett and Miles. Their favourite Foodess recipes are Moist Chocolate Cake, Chili Con Carne, extra-creamy Old Fashioned Baked Macaroni and Cheese, and my famous Meatloaf recipe.

When I’m not writing or experimenting with new recipes, you can find me exploring the great outdoors or bingeing cozy mystery novels.
