Chicken Caesar Wrap I hesitated to publish such a basic recipe, with photos taken with my crappy old iPhone camera no less… but you have to do what you have to do when you’re not yet recovered from a move (exhausted, buried in boxes) and your new photo studio is there somewhere, but currently under ten thousand paintings and framed photos that have yet to be hung. Besides, everyone can use some easy lunch inspiration, right?

Everything comes together super quickly with the advance prep I do: I buy a package of bacon and cook the entire thing in the oven, then freeze it (first in a single layer, then packed in freezer bags) to boost future meals. It’s perfectly crisp after 25 seconds in the microwave wrapped in a paper towel.

When I bring home lettuces and greens, I wash and spin them dry right away, then pack them into a ziploc bag with a paper towel and they stay crisp all week – plus then it’s basically zero effort to make a salad or boost the nutrition of any mid-week meal.

The dressing is my shortcut homemade caesar dressing (start with mayo instead of egg yolks) – I make a big batch and it keeps for 2 weeks in the fridge (provided your ingredients are fresh).

And the chicken is a cooked rotisserie beast!

I could write 101 posts on ways to use a rotisserie chicken. I buy one every few weeks and we eat it for days. I stretch it really far, bulking up meals with lots of veggies. This week we’ve eaten it once with leftover homemade mac & cheese, another night in cabbage & zucchini quesadillas, for lunch in a classic chicken salad, and in these chicken caesar wraps. Talk about stretching the dollar!

Ingredients
  • Large whole wheat flour tortilla
  • Handful of romaine lettuce, torn into bite-sized pieces
  • 1 slice cooked bacon, chopped
  • ½ cup chopped cooked chicken
  • 1-2 tbsp caesar dressing
Instructions
  1. Toss the lettuce, bacon and chicken with as much dressing as you need to lightly coat everything, then roll it up in the tortilla and enjoy!
Notes
I position all the ingredients on the wrap and toss them together with my hands to avoid unnecessarily dirtying a bowl.

    Thank you for your shortcut caesar dressing recipe. It was a hit at lunch today. Quick meal ideas are always welcomed! (My very-quick-breakfast-for-dinner version involves unsophisticated scrambled eggs and tortillas.) Best wishes for your unpacking (with baby).
